Feta-Stuffed Chicken
4 (4 ounce) skinned, boned chicken breast halves
¼ dry bread crumbs
¼ cup crumbled feta cheese with basil and tomato
vegetable cooking spray
Preheat oven to 400 degrees.
Trim chicken and pound to even thickness. Cut pocket into each breast and coat inside with bread crumbs. Stuff each chicken pocket with 1 tablespoon feta cheese and close with toothpick. Dredge outside of chicken in bread crumbs. Place chicken in 8-inch square baking pan coated with cooking spray. Bake, uncovered at 400 degrees for 25 minutes or until chicken is done..
