Fruit Pizza

2 ¾ cups flour
2 teaspoons cream of tartar
1 teaspoon baking soda
¼ teaspoon salt
½ cup butter or margarine, softened
½ cup shortening (we use butter-flavored Crisco)
1 ½ cup sugar
2 eggs

8 ounces cream cheese, softened
½ cup sugar
2-5 tablespoons fruit juice

Assorted chopped fruit


Preheat oven to 400 degrees.

In a large bowl mix together flour, cream of tartar, baking soda and salt.

With an electric mixer, cream together butter, shortening and sugar. Mix in eggs, one at a time, mixing well after each addition. Slowly add flour mixture and mix well.

Press cookie dough into large cookie sheet or pizza pans. Bake in preheated oven 8-12 minutes or until golden brown. Cool completely.

Mix together softened cream cheese and sugar. Add enough fruit juice (I use pineapple juice from canned pineapple) until mixture is spreadable and to taste. Spread on top of cooled cookie crust.

Top with assorted chopped fruit. Any fruit you like will work--we use pineapple tidbits, mandarin oranges, kiwi, bananas (to keep from browning: slice and place in a plastic container, pour lemon juice over, cover and shake to make sure all pieces are coated then drain), strawberries or raspberries if in season or frozen, thawed raspberries. Refrigerate until ready to serve.

Makes 12 servings
Ready in appx 45 minutes
