Mandarin Almond Shrimp

1 pound uncooked shrimp, peeled
2 cups sliced mushrooms
1 cup uncooked regular long grain rice
2 cups boiling water
1 teaspoon salt
3 to 4 teaspoons ground ginger
1 small onion, thinly sliced
1 cup whole almonds, toasted
1 (15 ounce) can mandarin oranges, drained
1 (6 ounce) package frozen Chinese pea pods, thawed

Preheat oven to 350 degrees.

Mix first seven ingredients in 9x13 inch baking dish. Cover with aluminum foil and bake about 40 minutes or until liquid is absorbed and shrimp are pink and firm. Stir in almonds, oranges and pea pods. Cover and let stand about three minutes. Serve with soy sauce.
