Pineapple Delight
½ pound vanilla wafers, crushed
¼ cup butter, melted
2 cups powdered sugar
1 can crushed pineapple, drained, juices reserved
8 ounces cream cheese, softened
½ pint whipping cream, whipped and sweetened to taste
Sprinkle vanilla wafers evenly over bottom of 9x13 inch pan.
In a mixing bowl cream together cream cheese and butter. Mix in powdered sugar and beat until fluffy. Thin with pineapple juice if needed to desired consistency. Carefully spread over cookie crumbs
Next layer pineapple then cover all layers with whipped cream.
Makes 12 servings
