Banana Muffins

1 ½ cups flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
3 very ripe bananas, mashed
½ cup packed brown sugar
1 egg
1/3 cup butter, melted and cooled slightly
1 teaspoon vanilla

Preheat oven to 375 degrees.  Lightly grease muffin pan.

In a small bowl mix together flour, baking soda, baking powder and salt.  In a large bowl mix together bananas, sugar, egg, butter and vanilla.  Stir flour mixture into banana mixture just until moistened.  Spoon batter into muffin cups.

Bake 15-18 minutes until a toothpick comes out clean.

*Can add nuts and/or mini chocolate chips.


Makes 12 muffins
