Fresh Pico de Gallo

1/2 whole large (or 1 small) onion
2 whole jalapeno peppers
1 teaspoon fresh minced garlic
½ small bunch cilantro
4 whole Roma tomatoes
Fresh lime
Salt and pepper to taste

This is a general guideline, all ingredients can be adjusted to taste.


Finely chop (or process in a food processor, if using a food processor, add ingredients in order and process after each addition) the onion, jalapenos, garlic, cilantro and tomatoes and combine in a mixing bowl.  Add juice from ½ a lime and salt and pepper to taste.  Mix and serve.
