Broccoli Cheese Soup
2 tablespoon butter
1 medium chopped onion
1⁄2 cup butter
1⁄2 cup flour
4 cups half-and-half cream
4 cups chicken stock
1 lb fresh broccoli (chopped into bite size pieces)
1 cup carrot, julienned
16 ounces grated sharp cheddar cheese
salt and pepper
crusty bread

4 cups chicken stock
1 lb fresh broccoli (chopped into bite size pieces)
1 cup carrot, julienned
16 ounces grated sharp cheddar cheese

Sauté onion in butter. Set aside.
In a large pot over medium heat, melt butter. Whisk in flour and cook over medium heat for
3-5 minutes. Stir constantly and add the half & half.
Add the chicken stock. Simmer for 20 minutes.
Add the broccoli, carrots and onions. Cook over low heat
20-25 minutes.
Add salt and pepper and cheese and heat until cheese melts.
Serve with crusty bread and enjoy.
