Gingerbread House Royal Icing

3 egg whites
1/2 teaspoon cream of tarter
4 3/4 cups powdered sugar

Mix egg whites and cream of tarter on medium speed until combined.  Add powdered sugar, one cup at a time, mixing well at medium speed between each addition.  Once all sugar is added beat at medium speed for two minutes until smooth and light.

Use immediately or cover and keep airtight until ready to serve, up to 12 hours.
