Hamburger Soup

2 tablespoons olive oil
1 onion , diced
2 cloves garlic , minced
3 tablespoons tomato paste
4 cups beef broth
1 pound ground beef, browned and drained
2 medium potatoes , peeled and diced
1 can (28 oz) diced tomatoes with juice
2 teaspoons Worcestershire sauce
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1 bay leaf
salt and pepper to taste
3 cups vegetables (carrots, celery, corn, green beans, etc.)

In a large pot, heat oil over medium-high heat and cook onion until softened. Add garlic and cook 1-2 minutes until fragrant.  Add tomato paste and cook 2 minutes.  Stir in broth making sure to scrape any bits from bottom of pot.

Add beef, potatoes, tomatoes, Worcestershire sauce, basil, oregano, bay leaves and salt and pepper to taste. Simmer covered 10 minutes.

Stir in vegetables. Simmer 15-20 minutes or until potatoes and vegetables are tender.  Check for seasoning.

Serve.
