Lentil Soup

2 tablespoons coconut oil
1 medium onion, chopped
1 bell pepper, chopped
4 carrots, peeled and chopped
4 cloves of garlic, minced
1 tsp garlic powder
1 tsp onion powder
1 tsp chili powder
1 tsp cumin powder
1 tsp curry powder
1 tsp turmeric powder
1/2 tsp cayenne pepper
1 1 pound bag of lentils
8 cups chicken broth
salt and pepper to taste



Heat oil in a large pot over medium heat.  Add onion, bell pepper and carrots and cook until soft, about 7 minutes. Add garlic and spices and cook stirring constantly until fragrant, about 2 minutes.  Add lentils and broth and mix well.  Bring to a boil then reduce to a simmer and cover.  Simmer 1 hour until lentils are tender.  Stir occasionally and add additional broth or water if needed.
