Turkey Gravy
Pan drippings from turkey
¼ cup butter
¼ cup flour
salt and pepper to taste
¼ cup butter

Strain drippings and discard solids. Leave to rest in a fat separator. Once separated, you will need 2 ½ cups of broth
from the drippings.
In a saucepan over medium heat, melt butter. Sprinkle flour over butter and cook, stirring
constantly, until golden, about 2 minutes.
Slowly whisk in the broth from the pan drippings and simmer, stirring
constantly, until thickened, about 5 minutes.
Keep warm until ready to serve.
