Buffalo Chicken Spaghetti Squash Casserole
One medium spaghetti squash, roasted and shredded
3 cups cooked cubed chicken
2 eggs
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/3 cup Frank’s Original Red Hot Sauce
1/2 cup blue cheese, crumbled (optional)
Preheat oven to 400 degrees
In a bowl, mix together squash, chicken, eggs, onion powder, garlic powder and hot sauce. Mix well.
Gently stir in blue cheese crumbles.
Pour mixture in a greased 9x13 baking dish. Bake at 400 degrees for 30-40 minutes or until top starts to brown and it's hot all the way through. Let rest for 5 minutes before serving.
Top with additional hot sauce and blue cheese if you like!
