Cinnamon Quick Bread

2 cups all-purpose flour
1 cup white sugar
2 teaspoons baking powder
½ teaspoon baking soda
1 ½ teaspoons ground cinnamon
1 teaspoon salt
1 cup buttermilk
¼ cup vegetable oil
2 eggs
2 teaspoons vanilla extract
4 tablespoons packed brown sugar
2 teaspoons ground cinnamon
4 teaspoons butter, cold

Preheat oven to 350 degrees. Grease one 9x5 inch bread pan or mini loaf pan.

In a large mixing bowl combine first six ingredients and mix on low 30 seconds to blend. Add in next four ingredients and mix on low 30 seconds to blend. Scrape down sides and mix on medium to high speed 3 minutes. Pour into prepared pan.

Combine brown sugar, cinnamon and butter in food processor and pulse until crumbly. Sprinkle over batter and cut in with knife to make swirls.

Bake 9x5 pan for 50 minutes and mini loaves for 20 minutes or until tester comes out clean. Remove bread from pan to rack to cool.

Makes 1 9x5 inch loaf or 8 mini loaves
