Garlic Herb Mashed Potatoes

1 pound red potatoes (peeled if desired) cut into 1-inch pieces
1/3 cup milk
¼ cup garlic and herb flavored cheese (Boursin)

In a saucepan simmer potatoes in water to cover until tender, about 10 minutes. Drain potatoes and return to pan. Mash potatoes with milk, cheese and salt and pepper to taste. Mix and cook over medium heat until potatoes are smooth and mixture is heated through.
