Garlic Shrimp in Spicy Tomato Sauce
2 tablespoons olive oil
6 cloves garlic, minced (less for company)
½ cup minced red onion
1 6 ounce can tomato paste
2 14.5 ounce cans tomatoes
1 ½ teaspoons salt
1 teaspoon crushed red pepper flakes (or to taste)
1-2 cups chicken broth
1 14 ounce package thin spaghetti
1 ½ pounds medium shrimp, peeled and deveined
¼ cup chopped fresh parsley
In a large saucepan, heat olive oil with garlic and onion over medium heat. Cook until softened but not brown. Add tomato paste and continue cooking while preparing other ingredients. Pour in tomatoes and season with salt and crushed red pepper. Thin sauce with chicken broth until desired consistency. Bring to a boil, lower the heat and simmer covered for 30 minutes, stirring occasionally.
After 30 minutes, add pasta to salted boiling water and add shrimp to sauce. Cook both for 6 minutes. Move pasta to saucepan and toss to coat. Stir in fresh parsley. Serve.
Serves 6-8
THM - FP - Leave out the pasta, serve with veggies or zoodles.
