Korean Spicy Cucumber

1 English cucumber, washed
1 teaspoon salt
2 green onions, chopped
2 garlic cloves, minced
2 teaspoons rice vinegar
½ teaspoon sugar
2-3 teaspoons hot pepper flakes
1 teaspoon sesame oil

Cut the cucumber lengthwise in half and cut diagonally into thin slices. Thinly slice the cucumber. Toss gently with salt and set aside for 15 -20 minutes.


Drain excess liquid. Mix well with all of the remaining ingredients.
