Lion House Meat Loaf


2 pounds lean ground beef
1 teaspoon salt
3 eggs, beaten slightly
¾ cup dry bread crumbs
Sauce (see below)

Mix ground beef, salt, eggs, bread crumbs and half the sauce until well blended. Mold into one large or two small loaf pans. Bake at 350 degrees for 1 ½ hours for large loaf about 1 hour for smaller ones. Remove from oven and allow to stand for about 10 minutes for easier slicing. Serve with remaining sauce.

Sauce
1 chopped onion
2 tablespoons shortening
2 cans tomato soup
1 tablespoons Worcestershire sauce
few grains pepper
¼ cup water

Saute onions in shortening until tender. Add soup, Worcestershire sauce, pepper, and water. Simmer a few minutes to blend flavors.

Makes 8 to 10 servings.
