Oatmeal Raisin Cookies
3 cups oats
1 ½ cups raisins
1 ½ cups all-purpose flour
½ teaspoon salt
½ teaspoon baking powder
¼ teaspoon nutmeg
½ teaspoon cinnamon
1 cup butter, softened
1 cup firmly packed brown sugar
1 cup white sugar
2 eggs
1 teaspoon vanilla
Heat oven to 350 degrees (325). Grease cookie sheets. Combine oats and raisins in a bowl. In another bowl, combine flour, salt, baking powder, nutmeg and cinnamon. In large bowl, beat together butter and sugars until fluffy, about 3 minutes. Add eggs one at a time then and vanilla and mix until creamy. Add flour mixture, mix well. Mix in oats and raisins until combined. Roll dough into two-inch balls (2 scoops) and place on greased cookie sheet. Bake for 12 to 15 minutes or until golden brown around edges. Cool on cookie sheet for 2 minutes before moving to cooling racks.
Makes 2 ½ dozen large cookies
