Orange Jicama Salad

1 large head red leaf lettuce, washed and dried, torn into bite-size pieces
1/2 medium sweet onion, sliced into thin strips (like you would for fajitas)
3 oranges, supremed
1 small jicama, peeled and cut into julienne strips

1/2 cup slivered almonds
3 tablespoons sugar

Dressing:
1/2 teaspoon grated orange peel
1/3 cup orange juice
2 tablespoons red wine vinegar
1/3 cup oil
1 tablespoon sugar
1 tablespoon good seasons dry italian dressing mix (1/2 an envelope)

Place first four ingredients in salad bowl and chill.

In a small skillet sprinkle 3 tablespoons sugar over nuts and cook untilnuts are coated and sugar dissolved (watch closely, burns easily). Cool.

Mix Dressing in a shaker jar and chill, pour over salad and toss. Sprinkle cool nuts over all and serve.
