Sister Simpson’s Coffee Cake
While serving in Milford, CT, Chad and his companion were lucky to be able to live in Sister Simpson's house. The missionaries had nick-named it "the Celestial kingdom" because Sister Simpson was so good to the missionaries that stayed with her. This was one of her famous recipes and she kindly gave it to us, along with a tube pan when we visited her on our honeymoon!
Cake:
1 box yellow cake mix (no pudding in the mix)
1 small box instant vanilla pudding
½ cup butter, softened
4 eggs
1 cup sour cream
Cinnamon-Sugar
Heat oven to 350 degrees. Generously grease tube pan.
Mix first five ingredients. Mix on medium speed 7 minutes.
Spread half cake batter into tube pan. Sprinkle with cinnamon sugar. Spread remaining cake mix and top with cinnamon sugar.
Bake 25 to 30** minutes or until golden brown and tester comes out clean.
