Chicken, Lemon and Dill with Orzo

This recipe from Everyday Food is one of our favorites. It's easy to put together and completely satisfying. I modified it slightly, you can go HERE for the original!




Chicken, Lemon and Dill with Orzo


4 cups chicken broth
1 tablespoon unsalted butter
3/4 cup water
Salt and Pepper to taste
1 pound chicken breasts, cut into 1-inch pieces
1 pound orzo
8 ounce block feta, crumbled
1/4 cup chopped fresh dill
zest (finely grated) and juice of one lemon
1 cup grated Parmesan

Preheat oven to 400 degrees. In a saucepan, bring broth, butter, water, salt, and pepper to a boil. In a 3-quart baking dish, combine chicken, orzo, feta, dill, lemon zest and juice. Pour broth mixture over ingredients in baking dish and stir once to incorporate. Cover and bake until orzo is tender and cooking liquid is creamy, 40 minutes. Sprinkle Parmesan on top and let stand 5 minutes before serving.
