Fresh Mint Ginger Lemonade/Limeade

½ cup (packed) chopped fresh mint leaves
1/3 cup chopped fresh ginger
1/3 cup honey
2 cups boiling water
1/3 cup fresh squeezed lemon or lime juice
1 ½ cups (about) water
Ice cubes
Mint leaves
Lemon or lime slices

Combine mint, ginger and honey in bowl.  Add boiling water.  Let steep 30 minutes.  

Strain into a 4-cup glass measuring cup, pressing on solids to extract liquids.  Add lemon/lime juice and enough water to measure 4 cups total.  Cover and refrigerate until ready to serve.

Fill cups with ice.  Add lemonade.  Garnish with mint leaves and lemon/lime slices. 


4 servings.


THM - Replace honey with alternate sugar-free sweetener.
