Korean Potato and Soy Sauce Side Dish
2-3 medium potatoes, diced – enough to equal 2 ½ cups
1 tablespoon oil
1/2 onion, diced
2 cloves garlic, minced
2 tablespoons soy sauce
1 tablespoon sugar
half cup of water
2 teaspoons sesame oil
Rinse potatoes in cold water to remove starch. Heat oil in a skillet over medium high heat and then add potatoes, cook for 2 minutes. Add garlic and onion and cook 3 minutes or until onion is translucent. Add soy sauce, sugar and water and simmer over medium heat for 10 minutes or until potato is cooked through and water has evaporated. Stir occasionally and add more water if needed.
