Pork Chop and Potato Bake
Sauce:
1/4 cup butter
1/4 cup flour
2 teaspoons salt (?)
2 teaspoons dry mustard
1/4 cup green pepper
2 cups milk
2 cups grated cheddar
6 boneless pork chops
1 tablespoon butter
salt/pepper/paprika
6 onion slices
6 tomato slices
3 cups sliced potatoes (slightly cooked)
1/4 teaspoon oregano
Melt butter, add flour, salt, mustard, stir well, add green pepper, milk, and cheese. Cook until thickened.
Brown pork chops in butter. In 9x13 greased pan add slightly cooked potatoes and cover with white sauce. Place browned pork chops on top and bake at 350 degrees for 45 minutes. Put sliced tomatoes and onion rings on top and sprinkle with oregano and bake 15 minutes more.
