Protein Pancakes

2 cup old fashioned oats
2 cup egg whites
2 cup low fat cottage cheese
4 teaspoons baking powder
2 teaspoons sugar-free sweetener
dash of vanilla extract

Place all ingredients in blender and blend well.

Heat nonstick pan over medium heat.  Pour mix onto pan in desired size pancakes.  Cook until tops have bubbles and flip.  Cook until golden brown.

Serves 6-8
