Baked Oatmeal

2 cups oats
1 cup unsweetened almond milk
3 tablespoons no sugar added applesauce
2 tablespoons truvia (or sweetener of choice)
1/3 cup egg whites
1 1/2 teaspoons baking powder
1/2 teaspoon salt
3 teaspoons vanilla
1 tablespoon cinnamon

Mix all ingredients in a bowl and stir well.  Cover and refrigerate overnight.  In the morning, preheat oven to 350 degrees.  Pour mixture into greased 8x8 pan.  Bake 25-30 minutes.
