Traditional Cheese Fondue

2 cups shredded Gruyere cheese (about 8 ounces)
1 1/2 cups shredded Swiss cheese (about 6 ounces)
2 tablespoons cornstarch
1 cup chicken broth
Small squeeze of lemon juice (about ¼ teaspoon)
1 teaspoon finely minced garlic
1/4 teaspoon pepper
1/4 teaspoon nutmeg

Place both the shredded Gruyere and Swiss cheeses in a bowl and toss with the cornstarch until evenly coated.

In an electric fondue pot, add the chicken broth, lemon juice, garlic, pepper and nutmeg and bring to a simmer. Reduce the heat to medium-low. Add the cheese, a small handful at a time, stirring constantly and gently.

Once the cheese is melted, check seasoning and add more salt and pepper to taste if needed.


Serve warm with your favorite fondue dippers.
