Ham Fried Rice

1 cup frozen corn
1 cup frozen peas
1 cup frozen carrots
4 tablespoons oil, divided
4 eggs
3 cups day old rice
1 cup chopped ham
2 tablespoons, soy sauce or to taste
salt and pepper to taste
drizzle of sesame oil
4 green onions, chopped

Heat corn, peas and carrots in hot water and drain.

In a large skillet, heat 2 tablespoons oil.  Crack eggs into bowl and whisk with fork.  Pour into skillet and cook until almost done but still a little wet.  Remove from pan and set aside.

Add remaining 2 tablespoons oil to pan and heat up.  Add rice and fry until rice is heated through.  Mix in eggs, vegetables and ham.  Add soy sauce and check for seasoning, add salt and pepper to taste.  Mix well and cook until all is heated through.  Drizzle with sesame oil and stir.  Sprinkle green onions and stir one more time.

Serve.
