Sugar Cookie Bars
1 cup unsalted butter, at room temperature
2 cups sugar
4 large eggs
1 tsp vanilla extract
1 tsp almond extract
4 1/2 cups flour
1 tsp salt
1 tsp baking soda

Preheat oven to 375 degrees.
With an electric mixer, cream butter and sugar until fluffy. Add eggs, one at a time, mixing well after each egg. Mix in vanilla and almond extract.

In a separate bowl, whisk together flour, salt and baking
soda. Add to wet mixture and mix just until combined. Spread evenly on a
greased half sheet pan (jelly roll pan).
Bake in preheated oven 10 – 12 min, until light golden brown.
Cool completely before frosting.

4 cups powdered sugar
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
2-3 tablespoons milk (or more, if needed)
Beat together butter, sugar and extracts until light and fluffy. Add enough milk to get it to the correct consistency. Spread over cooled cookie.
