Soft Gingerbread Cookies
2-1/4 cups all-purpose flour
2 teaspoons ground ginger
1 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
3/4 cup butter, softened
1 cup sugar
1 large egg
1/4 cup molasses
Additional sugar
2-1/4 cups all-purpose flour

Preheat oven to 350 degrees.
In a large bowl, combine flour, ginger, soda, cinnamon,
cloves and salt.
In a mixing bowl, cream butter and sugar until light and
fluffy. Beat in egg and molasses. Add flour
mixture to the creamed mixture and mix well.
Roll into 1-1/2-in. balls and roll in additional sugar.
Place two inches apart on ungreased baking sheets. Bake in preheated oven until
puffy and set, 10-12 minutes. Remove to wire racks to cool.
